Region : AOC Saint-Nicolas-de-Bourgueil comes from the AOC Bourgueil. The vineyards cover 1050 hectares. Production amounts to 58000 hl/year. The vineyard is located mostly on a wide terrace with old alluvial deep soils consisting of sand and gravel. Above the terraces, one third of the vineyard covers a hillside of limestone (Turonian chalk) covered with sand.

The grape used is Cabernet Franc. This appellation also includes a limited production of rosé from the same grape.

Cultural method : Fertilization is done with organic compounds or with small quantities of non-organic fertilizers. Grassing or tillage are done to limit the use of chemical herbicides but also to compete with the vine itself. This concurance avoids compaction of the clusters and the development of rot. Debudding is done manually to provide maximum air to the vine without depriving it of its foliage which is necessary for good ripeness.

Winemaking : Mechanical harvesting. Vinification is traditional with controlled temperatures in the stainless steel tanks. Micro-oxygenation is provided. The wine is kept with its floating cap for 2 weeks and aging is done from 8 months to a year depending on the vintage.

The Colour : Red grenat

The Smell : Frank and straight, the nose of this wine highlights a fruity freshness (cherry and rasberry).

The Taste : Natural tannins accompany stewed fruit aromas. A persistent taste.

Serving Suggestions : Accompanies rillettes and pâté (duck liver pâté), white meat and poultry. Serve chilled with peaches or pears.

Serve at 14-15 °C.
