Product Description

Region : Quincy is located in the Loire Valley, mainly on the left bank of the Cher, a tributary of the Loire. Its area is 230 ha and production is 10,500 hectoliters per year. The vines are planted on terraces overlooking the valley. The climate is semi-continental, and has a tendency to be dry and hot. The soil contains a lot of sand which is conducive to the development of sauvignon.

Cultural method : Pruning by ”simple guyot”. Disbudding and removing of the unwanted new shoots and thinning out of the leaves are done manually. Grass is left to grow between the rows of vines.

Winemaking : Mechanical harvesting and pneumatic pressing. Cold settling of the press-juice 2 times during 4 days (at 6 °C). Alcoholic fermentation and yeasting at 15 °C. 20 days of fermentation. Temperature and density are controlled daily. Racking and stabilization of the protein with ”bentonite” (special clay). Tartaric precipitation with cold temperatures. Sulfites are used in small quantity.

The Colour : Pale gold with green tints.

The Smell : Boxwood aromas with a hint of passion fruit.

The Taste : Fruity and very fresh.

Serving Suggestions : This wine reveals all its flavors when served at 10 °C.

Aging Capacity : 3 to 5 years.
