Region : The vineyard of Tokaj is located in the north-east of Hungary, on the border of Ukraine. It is enclosed between 3 mountains and extends over 5,500 ha (of which 3,000 are planted). Generally, the subrock consists of volcanic tuff, and loess soil and clay on top.

The proximity of Tisza and Bodrog rivers creates a microclimate

favorable to the development of noble rot. The weather is

characterized by harsh winters, dry summers and long autumns, dry and sunny suitable for passerillage.

Since 1630, Tokaj’s production has been regulated. It is one of the first regions in the world to have benefited an appellation of origin (1772).

Cultural method : Since 2005 Pendits Winery have been cultivating their vines organically without pesticides, herbicides and commercial fertilizers. It is the first organic winery in the whole Tokaj region. Furthermore, it became the first biodynamic winery certified by Demeter in Hungary.

Tillage of the narrow terraces is done by 2 horses. Pruning is done with one bud with 1-2 clusters per shoot. It maintains a very low-yield policy.

Winemaking : Select botrytised bunches, let it macerate overnight, squeeze, conduct the fermentation at 15 or 16 °C. Two years of aging in local oak barrels.

The origin of the word Szamorodni is Polish. It means “as he was born”. It is therefore the vinification of the whole botrytised cluster.

The Colour : Mid golden yellow

The Smell : Dried apricot, caramel

The Taste : Very fresh with a great acidity, and minerality. Very long and salty finish.

Serving Suggestions : To be drunk with a foie gras, a melon with ham, a lemon pie.

To be served at 12-14°C.
