NORMANDIE
“Pommeau de Normandie 5 years old”
Region : Coming from orchards of standard trees and cordons identified by the INAO and located in the “Pays d’Auge” appellation area (part of the Calvados département but which also takes in a few adjoining communes in the Orne and Eure), apple and pear trees are planted in the shallow soil of argilo-calcareous slopes and enjoy a temperate oceanic type of climate.
This Pommeau is made exclusively on the clay and limestone hillsides within the Pays d’Auge. The fruits are harvested in traditional high stalk orchards that combine tree cultivation and the growing of grass for livestock.

Making : Pommeau de Normandie is a blend of apple must and Calvados from Pays d’Auge that has been aged for a year in oak barrels. It is then aged in barrels for a minimum of 5 years, where it develops a harmonious taste.
Apple must is made with the greatest care from selected high stalk orchards. From October onwards, each variety of apples is harvested separetely, then pressed, to produce the juice, otherwise known as must.
The Colour : Mahogany clear and brilliant.
The Smell : Powerful and refined. Nuances of plum, crystallized citrus fruits opening out to aromas of nuts (almond and hazel).
The Taste : Supple and gentle attack. Good long-lasting mouthfeel. Aromas of ”tarte tatin” with notes of grilled hazelnut.
Serving Suggestions : Perfect for an aperitive. Pommeau is best served chilled. An ideal companion for fois gras, melon and desserts. Used in cooking for deglazing, it’s aromas will uplift dishes such as scallops or white meats.
