Region : The area of Chinon is located in Touraine. The climate is influenced by the ocean from the West and the more continental climate from the East. 112,000 hectoliters of juice are produced per year from 2,350 hectares of vineyard on the cliff bordering the Vienne, a tributary of the Loire. In general, there are two types of soils in Chinon. At the top of the hill the soil is called “tuff” (limestone) covered by clay loam. At the base of the hill, closer to the river, there are siliceous deep soils, called “Gravel”. The “tuff” are late growing soils. They give consistancy to the wine and a good aging potential.

Type of Soil : Limestone and clay, covered by ”Cornuelles” (hard white stone) which retain heat during the day and radiate heat during the night.

Cultural method : Rigorous work on the vine is essential. No pesticides are used. Tillage is done mechanically. Harvesting and sorting is done manually.

Winemaking : Alcoholic fermentation is accompanied by release and pumping-over for a period of 3 to 4 weeks, for a better extraction of tannins. Malolactic fermentation takes place on the pomace in a wooden tun. Aged for 12 to 18 months in barrels of 450 liters in volume. It is then bottled pure and unfiltered, with a minimum of sulfur.

The Colour : Deep red.

The Smell : Black fruit beautifully preserved.

The Taste : Bodied with some sweetness perfectly accompanied by silky tannins. Great persistence in the mouth.

Serving Suggestions : Suites game and red meat, particularly.

Serve at 16-18 °C.

Aging Capacity : 30 years. It is best to wait 3-4 years so that the oak tannins fade and become blended.
