Product Description

Region : Located between the Loire and Sologne, Cheverny has a semi-oceanic climate, slightly more continental than the Loire Valley and Touraine.

The soil consists of a limestone base made of Miocene limestones covered by sands and marl.

On the surface, the soils are more varied. The clay-limestone plots are particularly suited to Pinot Black and Romorantin. The silty clay soils are suitable for Gamay. This mix brings a nice complexity to the wines of the appellation.

Cultural method : One of the priorities of the winery is the development of microbial life in the soil so that the roots get all the relevant nutrients. The use of many different annual and perennial grasses, provide a favorable and diverse ecosystem. The soils are worked mechanically by tillage and scraping. Biodynamic products called “horn silica” (501) and “horn manure” (500) are used. The vineyard is protected by spraying small amounts of copper and sulphuric solutions and herbal teas.

Winemaking : Fermentation takes place using indigenous yeasts. Fermented and aged in barrels.

The Colour : Garnet red

The Smell : Red fruit, slightly spicy.

The Taste : Silky and persistent, fine and delicate retro-olfaction, marked by lightly roasted notes.

Serving Suggestions : Serve with a cheese plate, veal, duck breast, roasted poultry, or even a chocolate dessert.

Serving temperature between 15 and 16 °C.

Aging Capacity :

8 years and more.
