Region : The area of Chinon is located in Touraine. The climate is influenced by the ocean from the West and the more continental climate from the East. 112,000 hectoliters of juice are produced per year from 2,350 hectares of vineyard on the cliff bordering the Vienne, a tributary of the Loire. In general, there are two types of soils in Chinon. At the top of the hill the soil is called “tuff” (limestone) covered by clay loam. At the base of the hill, closer to the river, there are siliceous deep soils, called “Gravel”. The “tuff” are late growing soils. They give consistancy to the wine and a good aging potential.

Cultural method : No pesticides are used. Tillage is done mechanically. The harvest is manual.

Winemaking : Vinified for 3 weeks at a temperature of 25-30 °C. Daily pumping-over promotes fermentation and allows for the optimal expression of the structure of this wine. The malolactic fermentation takes place on the pomace after racking. After a few months of aging in a tank, depending on the year, the winemaker does a light filtration before bottling.

The Colour : Deep red.

The Smell : A distinctive wine with a bouquet of ripe fruit and candied fruit.

The Taste : Slightly acidic in the beginning, but balances out in the end.

Serving Suggestions : To be enjoyed with red meats and mild cheeses. Serve at 16-18 °C.

Aging Capacity : This wine is best between 2 and 8 years.
