Region : In the heart of Champagne, in the center of Epernay – Reims – Chalons en Champagne, Ambonnay is one of 17 villages classified as GRAND CRU out of 400 villages of Champagne producers. Type of Soil : Clay and limestone

Density of Planting : 8000 vines/ha

Age of Vines : 30 to 80 years

Yield : 60 hl/ha

Features : 12 % alcohol, dosage of liqueur 9,5 gm/l. Contains sulfits.

Cultural method : Tillage is done mechanically. The harvest is done manually.

Winemaking : Slow traditional vinification at 18-20 °C.

The natural fermentation starts with indigenous yeasts.

The malolactic fermentation occurs on the lees.

Clarification of wine done by mechanical filtration before bottling and second fermentation.

This champagne is aged in caves for 24 to 36 months.

The Colour : Bright golden yellow in color with fine, persistent perlage.

The Smell : Dominated by fresh aromas of white flowers, bread crust, candied cedro, honey and prickly aromas of gunpowder on the nose.

The Taste : The palate is incredibly creamy and fresh with a lingering, persistent finish.

Serving Suggestions :

Excellent with roasted chicken breast and thyme risotto, crab and salmon fishcakes or caramelised scallops on cauliflower purée.
