Product Description
Region : Touraine is located on the sedimentary Parisian basin formed during the Mesozoic era from marine deposits. These deposits consist of white chalk called “tuffeau”. The top most layer of deposit, which has less limestone but is rich in clay and silica, forms the “flint clay” that covers the plateau.

Cultural method : The domain´s work is certified with a ”Terra Vitis” label, which certifies that the environtment and the sustainability of the vineyard are respected.
Winemaking : This wine is made with the ”Champenoise” or Traditionnel method.
First step of the vinification : The Bottling
After filtration, a mixture of yeast, sugar and vitamins is added and the wine is bottled. This is done to obtain a second fermentation in the bottle.
Second step : Bottle fermentation
The bottles are stored in a cellar for a period of nine months. The yeast will convert the sugar into alcohol with carbon dioxide as a product (about 5 kg/cm² of pressure).
Third step : Storaging on sloped racks
The bottles are placed on sloped racks to pull the deposits (waste fermentation) into the neck of the bottles. The wine is stirred daily by a circular movement of the bottles for a period of 15-18 days.
Fourth step : The disgorgement
To remove deposits, disgorgement is performed. It consist of freezing a portion of the neck to trap deposits. When the bottle is opened, the ice is expelled by pressure gained during the fermentation. Before corking, liquor made from cognac is added. The amount of liquor added depends on what kind of product is wanted, Brut or Demi-Sec.
Serving Suggestions : Perfect as an aperitif. Goes well with desserts. Serve at 8-9 °C.
