Product Description
Region : The area of Chinon is located in Touraine. The climate is influenced by the ocean from the West and the more continental climate from the East. 112,000 hectoliters of juice are produced per year from 2,350 hectares of vineyard on the cliff bordering the Vienne, a tributary of the Loire. In general, there are two types of soils in Chinon. At the top of the hill the soil is called “tuff” (limestone) covered by clay loam. At the base of the hill, closer to the river, there are siliceous deep soils, called “Gravel”. The “tuff” are late growing soils. They give consistancy to the wine and a good aging potential.

Cultural method : No pesticides are used. Tillage is done mechanically. The harvest is manual.
Winemaking : Alcoholic fermentation is accompanied by release and pumping-over for a period of 3 to 4 weeks, for a better extraction of tannins. Malolactic fermentation takes place on the pomace in a wooden tun. Aging is done is oak barrels, during 10-18 months, depending on the characteristics of the wine, so that the oak tannins bind and then blend. Racking every 2 months oxygenates the wine and releases it from its lees. The characteristics of the different juices from different plots are respected untill the blending. It is always the degustation which will determine the final composition of the “Reserve Stanislas” and the date of bottling.
The Colour : Red ruby.
The Smell : Candied fruit, but after a few years the fragrance evolves into a forest-like earthy fragrance.
The Taste : Full-bodied and robust, this wine is balanced and powerful.
Serving Suggestions : Serve with red meat and game. This wine is a good companion of goats cheese. Serve at 16-18 °C.
Aging Capacity : 10 years or more according to the vintage year.
