Region : Located between the Loire and Sologne, Cheverny has a semi-oceanic climate, slightly more continental than the Loire Valley and Touraine.

The soil consists of a limestone base made of Miocene limestones covered by sands and marl.

On the surface, the soils are more varied. The clay-limestone plots are particularly suited to Pinot Black and Romorantin. The silty clay soils are suitable for Gamay. This mix brings a nice complexity to the wines of the appellation.

Cultural method : One of the priorities of the winery is the development of microbial life in the soil so that the roots get all the relevant nutrients. The use of many different annual and perennial grasses, provide a favorable and diverse ecosystem. The soils are worked mechanically by tillage and scraping. Biodynamic products called “horn silica” (501) and “horn manure” (500) are used. The vineyard is protected by spraying small amounts of copper and sulphuric solutions and herbal teas.

Winemaking : The grapes are gently pressed, and the deposit is left to settle. Fermentation occurs between 18 and 20 °C with natural yeasts. The next steps are done according to the traditional methode.

The Colour : Pale yellow with delicate bubbles.

The Smell : Fruity with aromas of nuts.

The Taste : Fresh and persistant.

Serving Suggestions : Perfect as an aperitif or accompanying any meal.
