Product Description

Region : Pouilly-Fumé dates back to the fifth century to the Gallo-Roman era. The vinyard became very famous due to the great experience of the Benedictine monks. In the twelfth century, Pouilly wine was renowned. The “smoky” name comes from two factors, the first is the presence of a grey bloom on the skin of the grapes when ripe. The second reason why winemakers call it “Pouilly Fumé Blanc” is because of the aromas that remind one of the smell produced when two flint stones are hit together to create a spark.

Cultural method : Simple Guyot pruning. Debudding in May and June. Mechanical tillage.

Winemaking : The harvest is mechanical. A selection of the best juice is done out of the press. A part is raised and fermented on fine lees for a year in new oak barrels. The other part is fermentated and raised on the lees in stainless steel vats. The temperature of the tanks is controlled by thermoregulation throughout the year.

At the time of bottling, an assembly is designed such that the woody aromas are not covering varietal aromas. In the end, the wooded wine represents 20% of the whole.

The wine will be retained for another year before being marketed.

The Colour : Pale yellow with hints of green.

The Smell : Intense bouquet combining toasted and exotic notes (lychees, peaches).

The Taste : Ample in the attack, round and fat in final, with a slightly acidulous to finish.

Serving Suggestions : The Pouilly-Fumé is perfect to accompangny smoked salmon, asparagus, seafood. Try the braised lobster with a julienne vegetables with a cream pepper d’Espelette.
