Product Description

Region : Located between the Loire and Sologne, Cheverny has a semi-oceanic climate, slightly more continental than the Loire Valley and Touraine.

The soil consists of a limestone base made of Miocene limestones covered by sands and marl.

On the surface, the soils are more varied. The clay-limestone plots are particularly suited to Pinot Black and Romorantin. The silty clay soils are suitable for Gamay. This mix brings a nice complexity to the wines of the appellation.

Cultural method : One of the priorities of the winery is the development of microbial life in the soil so that the roots get all the relevant nutrients. The use of many different annual and perennial grasses, provide a favorable and diverse ecosystem. The soils are worked mechanically by tillage and scraping. Biodynamic products called “horn silica” (501) and “horn manure” (500) are used. The vineyard is protected by spraying small amounts of copper and sulphuric solutions and herbal teas.

Winemaking : 2/3 by soft pressing and 1/3 by pellicular maceration. Alcoholic fermentation occurs between 18 and 20 °C. The wine is aged on its fine lees for 4 to 6 months before bottling. The wine is kept for 4 years before being released into the market.

The Colour : Light golden yellow.

The Smell : Musk aroma typical of this grape variety and aromas of peat and citrus zest.

The Taste : Ample, with notes of mirabelle plums. An impressive aftertaste with good minerality. A surprisingly different taste.

Serving Suggestions :

Serve with St. Jacques scallops, fried asparagus, fish, chicken or veal with cream.

Serve at 10 to 12 °C.

Aging Capacity :

Between 10 and 15 years.
