Region : Sancerre covers 2,800 hectares on the right bank of the Loire river, northeast of Cher. This AOC annually produces 164,000 hectoliters of wine.

Type of Soil : The estate vineyard is located across the region of Sancerre. Representing the three types of soils are: flint (silty clay), white soils (clay and limestone) and caillottes (clay and limestone).

Features : 12,5 % alcohol. Contains sulfites.

Cultural method : Grassing contributes to the self-sufficiency of the vines and minimizes the use of fertilizer. The pruning performed is single Guyot and Cordon de Royat.

Winemaking : The grapes are harvested mechanically and pressed whitin two hours of picking. After settling, the juice is fermented at a controlled temperature, between 19 and 20 ºC. Racking is done a few weeks after the fermentation to collect the lees. The lees are aerated regularly for 2 weeks to allow the extraction of flavors and then they are incorporated and brewed with the wine for a month.

The wine is aged for eleven months. Racking is done twice according to the phases of the moon to clarify the wine (by respecting the lunar phases that participate in atmospheric pressure, fining and filtration operations can be avoided).

The Colour : Pale greenish gold.

The Smell : Dominant aromas of white flowers and citrus.

The Taste : The wine is dry, fruity and nervous.

Serving Suggestions :

Drink with seafood, fish, white meat like rabbit and goat cheese (Crotin de Chavignol).

Serve between 9 and 11 °C.
