Region : Sancerre covers 2,800 hectares on the right bank of the Loire river, northeast of Cher. This AOC annually produces 164,000 hectoliters of wine. The land where the vineyards of Sancerre are, is often very steep and heavily sloping. The vineyards have a lot of microclimates and can be very different. The hills of Sancerre protect the land from strong winds and rain. The Sauvignon is the only grape variety used for making white wines, and Pinot Noir for the red and rosé wines. The white wines develop with age but when they are young they offer opulent aromas of the Sauvignon. The wines from the caillottes and graviottes are generally fine, soft and fruity, with aromas of white peach and lime.

Cultural method : François and Jean-Marie Cherrier produce this great Sancerre with Sauvignon Blanc from their best slot. Yields are kept low on purpose in order to have an optimal concentration of sugars and other elements.

Winemaking : Grapes are mechanically harvested and pressed within two hours after being picked up. After the cold settling, a part of the vintage is fermented in thermoregulated stainless steel tanks, the other part is distributed in neutral oak barrels. The part in barrels is raised during eleven months with a bâtonnage every month to put the fine dregs back in suspension. The wine from barrels are then assembled, without filtration or of passage in the cold to protect their aromas and flavor. Then the assembled wine is raised in a tank.

The Colour : Pale green-gold.

The Smell : Aromas of licorice married to acidulous citrus flavors.

The Taste : Complex wine, well balanced with fruity aromas.

Serving Suggestions : As an aperitif or with fish in sauce. Perfect for crab or lobster salad but also with white meat (poultry, rabbit), and of course with goat cheese “Crotin de Chavignol”.

Serve at 10 ° to 12 °C
